Carbohydrate Metabolism Glucose

Feeling drunk after eating carbohydrates?
This question is from my textbook. I don’t know the answer.
“The student Dina thinks she needs to consult a doctor: after every carbohydrates-rich meal she feels drunk and lack of control, as though she drank alcohol. Often she even suffers hangovers the morning after. Dina, who took introductory biology, assumes that some factor disrupts the glucose metabolism in her body. Offer an explanation to this assumption.”
My guess would be that Dina has heard of “Lactic acid fermentation” and is confusing it with Ethanol fermentation.
In humans, in anaerobic conditions, glucose is fermented to Lactic acid (which is recycled in the liver). In yeasts glucose is fermented to Ethanol. Dina has confused the two, and believes that she is producing excess ethanol in response to eating carbs.
This combined with the placebo effect and a degree of hypochondria can explain Dina’s reported symptoms
